KUSA – We're in the midst of Denver Restaurant Week, and during 9NEWS at 4, we're featuring
some of the restaurants that are participating.
Monday, we brought in Chef Andrew Niemeyer from the Cart-Driver. He made Celery Root Mignonette.

Celery Root Mignonette, for oysters:
1 celery root 1 red onion 2 cups champagne vinegar 1/4 cup simple syrup
Brunoise the celery root and onion as small as possible. Mix together with the vinegar and simple syrup and let stand at room temperature for 2 hours before serving.
